 4 cups carrots, shredded
 1 1/2 cup soaked raisins
 1 1/2 cup soaked cashews, or baby coconut meat
 1/2 cup raisin soaked water
 4 Tbs. maple syrup, or 2 Tbs. honey (optional)
 1/2 tsp. cinnamon
 1/2 tsp. pure vanilla extract

Mix the shredded carrots and soaked raisins in a bowl. Raisins will have to be soaked in advance. The day before would be preferable. Soak 1 cup of raisins to obtain 1 1/2 cup (or more). Save soak water. Blend all the rest of the ingredients together. Mix this sauce into the bowl with the rest of the ingredients.
